Lazy Gourmet Catering team recently had the pleasure of preparing the catering for Misha and his group of friends for a very special event - his 40th birthday weekend celebration in Cabo San Lucas.
Our event manager Lulu and our team of chefs were on the mission to provide delicious meals to Misha and his friends throughout the day, from breakfast, where we started the day with tea and coffee selections, freshly squeezed juices, a selection of home made banana and walnut breads, fresh fruit and greek yogurt, housemade granola, as well as the famous Mexican - and not to be missed while in Cabo - traditional breakfast dish of chilaquiles with red tomato and green poblano sauces.
During the day, while the group was enjoying the sun and pool, chips, salsa and guacamole were served, along with healthy fresh vegetable crudité snackw with tajin and lime. The lunch followed with probably some of Mexico’s favorite bites: fresh catch of the day and Sea of Cortéz shrimp tacos, hand made Nixtamal tortillas, organic greens sourced from local farmers and more.
But the most exciting part of the celebration was Misha’s birthday dinner, which was a real treat! For appetisers we prepared blue corn sopes with salpicon of duck, guava chutney and friseé salad and ginger & jalapeño tuna tartar served on sesame won ton. Main dishes were sea bass in 5 chili dust with cauliflower puree, confit short ribs in hibiscus reduction with creamy polenta and wild mushrooms, and poached lobster medallion, citrus thyme & shallot butter, served with saffron asparagus risotto.
If we may say so ourselves, Misha and his group of friends loved all the culinary delights that the Lazy Gourmet Catering team created for them, and we enjoyed very much being part of the celebration!
